Chicken is a dinner option that has so many different ways of preparing it. Not only does this mean that you can try a multitude of chicken recipes and never grow tired of them, but it gives you a different flavor every time. Chicken is by far the favorite meat to cook for my family. With dishes like paprika chicken and chicken broccoli noodle casserole, we eat this meat at least once a week. If you are looking for a new chicken dinner option, then this mustard curry chicken is a great choice. With just a few ingredients, it creates a wonderfully filling and delicious meal.

Mustard curry chicken
- In a medium pot, add 1 cup of rice and 2 cups of water. Bring to a boil and then reduce to a simmer. Cook for about 7 minutes or until all water is absorbed.
- Place chicken in a large pan and cook until nearly done.
- Cook desired vegetables to go with the meal. Steamed broccoli and carrots are great but any vegetable will work.
- Add mustard to chicken and stir to coat. Then sprinkle on curry powder. Cook for 2-3 minutes, then serve.
It’s that easy! Mustard curry chicken is my favorite quick-to-cook chicken dinner. It’s great for those nights when you don’t have a ton of time to cook but still want to make a healthy and filling meal.
