Oatmeal raisin muffins – great for breakfast

There is something about baked goods with raisins in them that make my mouth water. Especially if there is a healthy dose of cinnamon as well. When it comes to breakfast, muffins reign supreme in our house. They are a delicious option to grab in the morning, or for a snack during school or work. There are plenty of different muffins out there to make, allowing you to use what’s in season or bake a particular flavor on a whim. One of our favorites is oatmeal raisin muffins. These muffins are fairly filling, so they are perfect for breakfast. With their chewy texture and that perfect combination of cinnamon and raisin, they are sure to please even the pickiest of eaters.

Oatmeal raisin muffins

This recipe makes 12 muffins. However, it can easily be doubled or tripled if desired.


  • 1 cup quick oats
  • 1 1/4 cups buttermilk
  • 1 egg, lightly beaten
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 Tablespoons cinnamon
  • 1/2 cup raisins


  1. Preheat oven to 400 degrees.
  2. In a small bowl, combine oats and buttermilk.
  3. In a small mixing bowl, combine the egg, brown sugar, and oil; stir in the oat mixture.
  4. Combine the dry ingredients; stir until thoroughly mixed.
  5. Fold in raisins.
  6. Fill lined muffin cups 3/4 full.
  7. Bake at 400 degrees for 15-18 minutes. Cool on a wire rack.

    1. Yes, it can be adapted to other things. We have made them with dried cranberries and other dried fruit and they turn out well.

    1. I would imagine that substitute would work. You may need to play around with the amount of applesauce a bit but I would imagine the taste would be great.
